Ancho and Lager Grilled Chicken Breasts

Ingredients:

1 cup lager style beer
1/2 cup FIVE STAR ANCHO PEPPER FLAVORMAK'R
1/2 teaspoon salt
2 tablespoons red wine vinegar
1/4 cup corn oil
8 - 5 ounce boneless, skinless chicken breasts

Directions:
Whisk together the beer, ANCHO PEPPER FLAVORMAK'R, salt, vinegar and
corn oil in a non-reactive mixing bowl. Put the chicken breasts into the marinade
then cover with plastic wrap and shill. Let the chicken marinate for 2 to 4 hours.
Prepare a charcoal or gas grill to medium high heat. Remove chicken from the
marinade, shake the excess marinade off, back into the bowl and put them on a
clean plate. Pour the marinade into a saucepan and bring to a simmer over medium
heat for 20 minutes. Grill the chicken for 3 to 4 minutes per side until just cooked
through. Remove from the grill and serve over Arroz Mexicalli (Mexican Rice, see
recipe) with the remaining marinade/sauce ladled over the top.
