Béarnaise Sauce
Ingredients:
1/2 tablespoons butter
2 shallots finely diced
1/4 cup red wine vinegar
2 tablespoons balsamic vinegar
2 sprigs (1/2 tablespoon dry) tarragon
1/2 teaspoon crushed black pepper
2 cups prepared FIVE STAR HOLLANDAISE SAUCE
Directions:
In small sauce pan add butter and shallots. Sauté until
tender and then add Red wine Vinegar, sprigs, tarragon
and black pepper. Reduce mixture to 1/4 cup
Stir reduction into prepared FIVE STAR
HOLLANDAISE SAUCE.
