Butternut Squash & Apple Bisque

Ingredients:
1 medium onion, diced                                        2 Tbls. Five Star Curry FlavorMak'r®

1 butternut squash, (1 1/2 pounds, cubed)           5 cups Five Star Vegetable Stock*

1 tart apple, cubed                                              3 Tbls. cold butter

2 cloves garlic diced                                           1/4 cup heavy cream

1 Tbls. butter                                                      Salt and white pepper to taste

 

Peel and seed the squash and the apple, then cut each into cubes.  In a 4-quart pot, heat the butter and sauté the garlic and onion until the onion is translucent, about 5 minutes.  Be careful not to scorch.  Add the squash and apple and cover the pot to stew for 5 minutes. 

 

Add Five Star Curry FlavorMak'r, vegetable stock and cream to the pot, bring to a boil, then reduce to a simmer.  Cover and cook 20-30 minutes, or until the squash is tender.

 

In a food processor or blender (preferred), puree the soup while adding the cold butter.  Add salt and white pepper to taste.  Makes 6 servings.

 

Optional: Add 1 Tbls. of fresh chopped ginger to the onion sauté, or chopped candied ginger as a garnish.  Garlic croutons are also a nice garnish options.

 

*Use one teaspoon of Five Star Vegetable Stock to each cup of water.
