Chipotle and Tequila Grilled Pork
Ingredients:
1/2 cup FIVE STAR SMOKED CHIPOTLE FLAVORMAK'R
1/4 cup gold tequila
1/4 cup lime juice
1/4 cup vegetable oil
2 pounds pork tenderloin, cleaned of fat and sinew
Directions:
Whisk together the SMOKED CHIPOTLE FLAVORMAK'R, tequila, lime juice
and vegetable oil in a mixing bowl. Toss the pork in the marinade so that it is
well
coated. Cover and chill for 2 to 4 hours. Prepare a gas or charcoal grill to
medium
high heat. Remove pork form the marinade, scrape off the excess marinade back
into the bowl. Grill pork for 5 minutes per side. Put marinade in a small
saucepan
and simmer for 2 minutes. Keep warm. Remove pork from the grill and slice
thinly across the grain, put back into the sauce and keep warm. Serve over red
beans and rice, plain white rice or use it to fill tacos.
This recipe produces approximately 6 portions.
