Classic French Onion Soup
Ingredients:
1/4 cup butter
1 1/2 pounds yellow onions, peeled and julienne cut
2 each large shallots, peeled and sliced
1 1/2 tablespoons sugar
1/2 cup dry Madeira wine
2 teaspoons kosher salt
1/2 teaspoon ground black pepper
1/2 gallon prepared FIVE STAR AU JUS
8 slices French bread, 3 inch diameter, 1/2 inch thick
1 1/2 cups shredded Gruyere cheese
Directions:
Preheat oven to 425 F. Heat butter until foaming over medium high heat in a
large
soup pot, add the onion and shallot then sauté until golden brown. Stir in the
sugar, cook 1 minute, add the wine and simmer for 2 minutes. Season with salt
and pepper, add the prepared AU JUS, bring to a boil then simmer for 10 minutes.
Meanwhile, arrange bread slices on a baking sheet in a single layer and toast in
the
oven until crisp and golden. Sprinkle cheese evenly over toasts and return to
the
oven just long enough for the cheese to bubble. Ladle soup into bowls, top with
a
cheese toast slice and serve.
This recipe produces approximately 8 - 12 ounce portions.
