Country Garden Vegetable Soup
Ingredients:
2 tablespoons butter
1 cup large diced carrots
1 cup large diced onions
1 cup large diced celery
6 cups water
2 tablespoons FIVE STAR VEGETABLE STOCK
1 cup large diced skin on red potatoes
½ cup each peas, sweet corn kernels and cut green beans
1 cup diced tomatoes
1 cup diced zucchini
1 - 16 ounce can great northern beans, drained
Directions:
Melt the butter in a large soup pot. Add the carrots, onions and celery then
cook
over medium heat until the onions are translucent while stirring often. Add the
water and VEGETABLE STOCK then stir well to dissolve. Add the remaining
ingredients. Bring to a boil then simmer for 20 minutes.
This recipe produces approximately 8 – 12 ounce portions.
