Cream of Broccoli Alfredo Soup
Ingredients:
1 pound broccoli buds
1 tablespoon butter
1 cup diced yellow onions
2 cups peeled and diced red potatoes
1 quart water
1 quart prepared FIVE STAR PARMESAN CREAM SAUCE
FIVE STAR PARMESAN PEPPERCORN SEASONING
Directions:
Cut up broccoli buds and set aside. Heat butter in a large soup pot, add onions
and
cook over medium heat until translucent. Add potatoes and water. Bring to a boil
then simmer for 15 minutes. Add broccoli and simmer until potatoes and broccoli
are tender but broccoli is still green (about 10 minutes). Blend and combine
with
prepared PARMESAN CREAM SAUCE and heat just to a simmer. Thin soup to
desired consistency with milk or water, adjust seasoning with PARMESAN
PEPPERCORN SEASONING to taste and serve.
This recipe produces approximately 8 - 12 ounce portions.
