Cream of Wild Mushroom Soup with Wild Rice
Ingredients:
2 tablespoons butter
1/4 pound each shiitake, oyster and portobello mushrooms, sliced
1 cup diced onions or leeks
1/2 gallon prepared FIVE STAR CREAM SAUCE PREP
1 quart water w/ 3 tablespoons FIVE STAR VEGETABLE STOCK
3 tablespoons FIVE STAR WILD MUSHROOM FLAVORMAK'R
2 cups cooked wild rice
1/4 cup dry sherry
salt and pepper
Directions:
Heat the butter in a large soup pot until it foams then add the onions and
mushrooms. Cook over high heat until browned. Deglaze pot with sherry (away
from the flames!) and cook until most of the liquid is evaporated. Add remaining
ingredients and bring to a boil while stirring. Adjust seasoning to taste with
salt
and pepper.
This recipe produces approximately 10 - 12 ounce portions.
Add fresh rosemary sprigs for a nice garnish option.
