Arroz Mexicalli (Mexican Rice)
Ingredients:
1 quart water
2 tablespoons FIVE STAR CHIPOTLE PEPPER FLAVORMAK'R
2 tablespoon CHEF SID'S BEEF STOCK
2 cups medium or long grain white rice
1 cup finely diced fresh tomatoes
1 cup finely diced celery
Fresh cilantro sprigs for garnish
Directions:
Combine the water, BEEF STOCK and CHIPOTLE PEPPER FLAVORMAK'R.
Bring to a boil then stir in the rice, tomatoes and celery. Cover and turn the
heat
down to a low simmer. Let cook undisturbed for 15 minutes, remove from heat
and set aside to rest for another 5 minutes. Stir well, portion onto plates and
garnish with the cilantro sprigs.
This recipe produces 8 portions.
