Avgolemono Soup
Ingredients:
1 tablespoons CHEF SID's CHICKEN STOCK
4 cups water, divided
1/4 cup dry FIVE STAR CREAM SAUCE PREP
2 cups prepared FIVE STAR HOLLANDAISE SAUCE
1/4 cup lemon juice
2 cups cooked white rice
1 cup cooked diced chicken
1/4 teaspoon ground black pepper
Directions:
Combine CHICKEN STOCK and 3 cups of water and bring to a boil. In a
separate bowl, whisk together the CREAM SAUCE PREP and remaining
1 cup of water. Briskly stir it into the simmering broth. Let simmer for 2
minutes. Whisk prepared HOLLANDAISE SAUCE into the simmering
broth then simmer 4 minutes. Stir in remaining ingredients, let simmer
for 2 minutes and serve hot.
This recipe produces approximately 6 - 12 ounce portions.
