Jerked Chicken Breasts
Ingredients:
2 tablespoons lime juice
2 tablespoons vegetable oil
2 tablespoons FIVE STAR JAMAICAN JERK SEASONING
8 - 5 ounce boneless, skinless chicken breasts
1/2 teaspoon CHEF SID'S CHICKEN STOCK
1/2 cup water
Directions:
Combine lime juice, oil and JAMAICAN JERK SEASONING in a
stainless steel or glass bowl. Put in the chicken breasts and turn to coat
well with marinade. Cover and refrigerate for 1 to 4 hours. Put a 12 inch
non-stick pan on medium high heat. Remove chicken from marinade
letting the excess drip back into the bowl. Sauté chicken, covered, for
3 to 4 minutes per side. Remove from the pan and place on a serving
platter. Add the CHICKEN STOCK and water to the pan, stir and bring
to a boil. Pour finished sauce over the chicken and serve with Braised
Root Vegetable Couscous (see recipe).
This recipe produces 8 portions.
