Fajita Beef Entree Salad
Ingredients:
4 teaspoons FIVE STAR TACO/FAJITA SEASONING
4 teaspoons red wine vinegar
1/2 cup corn oil, divided
4 - 8 ounce sirloin or strip steaks
1 cup mild tomato salsa
8 cups mixed baby greens
1 cup shredded monterey jack cheese
2 cups fresh fried corn tortilla strips
Fresh cilantro sprigs for garnish
Directions:
Whisk together the TACO/FAJITA SEASONING, vinegar and 1/4 cup of the
corn oil in a mixing bowl. Toss the steaks in the marinade so that they are well
coated. Cover and chill for at least 1 hour. Stir together the salsa and
remaining
corn oil in a large mixing bowl. Prepare a gas or charcoal grill to medium high
heat and grill the steaks until medium rare (about 1 to 2 minutes per side).
Toss
together the greens, salsa, cheese and tortilla strips then divide among 4
dinner
plates. Slice each steak thinly across the grain and fan over the top of a salad
and
serve garnished with cilantro sprigs.
This recipe produces 4 portions.
