Five Star Lobster Bisque
Ingredients:
3/4 cup water
1/2 cup dry white wine
2 tablespoons FIVE STAR LOBSTER STOCK
3 cups prepared FIVE STAR CREAM SAUCE PREP
1/4 cup heavy cream
1 tablespoon tomato paste
1/8 teaspoon hot pepper sauce
1 tablespoon butter
5 ounces raw lobster meat, diced
1/2 tablespoon Amontillado sherry
Fresh chives for garnish
Directions:
Combine water, wine and LOBSTER STOCK in a soup pot. Simmer 5 minutes.
Whisk in prepared CREAM SAUCE PREP, heavy cream, tomato paste and hot
pepper sauce. Bring to a boil then keep warm over low heat. Melt butter in a
sauté
pan and add the lobster meat. Cover and cook gently over low heat until just
done.
Stir sherry and cooked meat into the soup. Serve hot, garnished with fresh
snipped
chives.
This recipe produces approximately 4 - 10 ounce portions.
