Jamaican Braised Pork


Ingredients:
2 pounds pork shoulder roast
2 1/2 teaspoons FIVE STAR JAMAICAN JERK SEASONING, divided
2 cups sweet red vermouth
2 tablespoons vegetable oil
2 cups prepared FIVE STAR AU JUS

Directions:
Preheat oven to 350F. Sprinkle pork all over with 2 teaspoons JAMAICAN JERK
SEASONING. Heat the oil in a Dutch oven over high heat. Brown the roast all
over, pour in the vermouth (away from the flames!), cover and braise for 1 hour
and 15 minutes in the oven. Remove roast to a cutting board to rest, stir the
prepared AU JUS and 1/2 teaspoon JAMAICAN JERK SEASONING into the
pan. Bring to a boil and let simmer for 2 minutes. Slice the roast and serve with
the sauce on Braised Root Vegetable Couscous (see recipe).
