Lobster and Sweet Corn Chowder

Ingredients:
2 tablespoons butter
3/4 cup minced yellow onions
1/2 cup minced celery
3 cups fresh sweet corn kernels, (about 3 large ears)
4 each "B" size red potatoes, washed and diced
1/4 cup Amontillado sherry
2 cups water
2 tablespoons FIVE STAR LOBSTER STOCK
3 cups prepared FIVE STAR CREAM SAUCE PREP
1/2 cup heavy cream
1/2 pound cooked lobster meat, diced
2 teaspoons minced fresh thyme

Directions:
Heat butter until foaming in a large soup pot. Add the onions and celery. Cook
over medium heat until softened, stirring often. Add corn kernels and diced
potatoes. Cook on high heat for 2 minutes while stirring. Add the sherry (away
from the flames!) and boil for 2 minutes more. Stir in the water, LOBSTER
STOCK and prepared CREAM SAUCE PREP. Bring to a boil then simmer 20
minutes while stirring often. Stir in the cream, lobster meat and thyme. Cook
2 more minutes then serve.

This recipe produces approximately 8 - 12 ounce portions.
