Pork and Spinach Breakfast Casserole

Ingredients:
1 pound ground pork
2 tablespoons FIVE STAR ROTISSERIE ROAST SEASONING BLEND
1-10 ounce bag fresh spinach
12 slices sandwich bread
8 ounces cheddar cheese, shredded (about 4 cups)
8 eggs
3 cups milk

Directions:
Put the meat and 1 tablespoon ROTISSERIE ROAST SEASONING into a skillet
over medium heat. Break into crumbles while cooking until the meat is just done.
Add the spinach and cook until wilted. Set aside to cool. Layer 6 slices of the
bread in the bottom of a 9 x 13 pan then top with half of the cheese and the
meat/spinach mixture. Top that with the other 6 slices of bread. In a mixing bowl,
whisk together the eggs, milk and the remaining ROTISSERIE ROAST
SEASONING. Pour the egg mixture over all, and then top with the remaining
cheese. Cover and chill for at least 2 hours and up to overnight. Preheat an oven
to 325ºF. Uncover and bake the casserole for 1 to 1 1/4 hours or until set.
Remove from the oven and let it rest for 10 minutes before serving.

This recipe produces 8 to 12 portions.
