Roasted Salmon with Dueling Vinaigrettes

Spring is in the air. This salad makes for a wonderful lunch or very nice light evening meal. The robust flavor of the vinaigrettes pair very well with a rich chardonnay or pinot noir. Enjoy the spring...you only get one this year.

 

Vinaigrette with Roasted Garlic FlavorMak'r®

& Parmesan Peppercorn Seasoning

Vinaigrette with Roasted Red Bell Pepper FlavorMak'r®

& Garlic Cracked Peppercorn Seasoning

 

1/4 Cup Red Wine Vinegar

1/4 Cup Red Wine Vinegar

1 Teaspoon Balsamic Vinegar 1 Tablespoon Balsamic Vinegar
1 Cup Olive Oil 1 Cup Olive Oil

1 Tbls. Five Star Parmesan Peppercorn Seasoning

1 Tbls. Five Star Garlic Cracked Peppercorn Seasoning

1 Tsp. Five Star Roasted Garlic FlavorMak'r®

1 1/2 Tbls.  Five Star Roasted Red Bell Pepper FlavorMak'r®

   

Oil and then generously season Salmon sides with your choice of either Parmesan Peppercorn Seasoning or Garlic Cracked Peppercorn.

Roast the Salmon at 325º until med to med rare* and then rest to room temperature.

Place the roasted Salmon on a bed of fresh spring greens garnished with fresh diced or grape tomatoes, shaved carrots, sliced red and yellow peppers and/or additional favorite vegetable garnish.

Dress with your choice, or offer both prepared Vinaigrettes.

Makes 6-8 servings.

 

Optional:  To prepare single portions, grill a pre-seasoned salmon steak over a single service of greens.

 

*Cooking the salmon on a BBQ grill, covered and at a lower temperature is also an excellent option.
