Vegetarian Chili

Ingredients:
1 tablespoon vegetable oil
2 cups diced zucchini
1 cup diced carrots
1 cup each diced green and red bell peppers
8 ounces quartered mushrooms
2 cups cauliflower florets
1 1/2 cups tomato juice
1 - 28 ounce can diced tomatoes
1 - 16 ounce can garbanzo beans (drained)
1 - 16 ounce cans black beans (drained)
1 - 4 ounce can mild diced green chilies (drained)
1/4 cup FIVE STAR VEGETABLE CHILIMAK'R

Directions:
Heat oil in a large soup pot and add the vegetables. Cook over high heat until
lightly browned. Add remaining ingredients and stir well to dissolve the
VEGETABLE CHILIMAK'R. Simmer uncovered for 30 minutes. Serve hot with
a variety of your favorite toppings such as sour cream, shredded marble jack
cheese, diced green onions etc.

This recipe produces approximately 8 - 12 ounce portions.
